Ready for Prime Time

Happy Anniversary!

Peter and I celebrated twenty-two years together last Friday.

While not a wedding anniversary, on January 4, 1997, I went over to his house to watch a few movies (The Godfather, and The Godfather, Part II, to be exact) and to eat ravioli. By January 5th, we were a done deal.

Whether or not true love was due to Francis Ford Coppola’s movies, our mutual love for Italian food or Peter’s inability to live without my amazing personality, I may truly never know. I do know that ever since that cold January day in Evanston, we celebrate every January 5th with each other, and with food.

Really Good Food

This year was no different, as we had prime rib. Prime rib has become, for us, a tradition to either have on Christmas, or on our anniversary.

We usually go to a higher end grocery store to get a really good rib roast, and all the extras that will go with it.

This year’s extras included a nice bottle of champagne, asparagus and several varieties of Swiss cheese for a nice au gratin. Since Peter is still full Keto, I ate the bacon cheddar scones all by myself.

How could this not be the best thing I ate last week.

Pride & Perfection

Peter takes a lot of pride in preparing the roast with salt and pepper, using the food thermometer to ensure perfect doneness, and then once its done, using an old electric knife that he inherited from his mom, to cut through the perfection that is a prime rib roast.

Liberty anxiously awaits the bone she knows she gets every year.

Peter always does a great job, and not only was it the best thing I ate last week, but it’s usually one of the best meals I have all year. A meal with the person I love best, and the one I want to eat with for the rest of my life.
