Did you know that many people grow up not knowing that beef makes good barbecue? Good people in good parts of the world grow up never eating brisket or beef ribs?! Did you know that?
I didn’t know that when I was growing up but I found out when I moved from Austin to Chicago way back in 1991. A waitress at a famous so-called barbecue joint in Chicago mocked me when I asked if they had beef ribs (I’ve never been much of a fan of pork barbecue…)
“Sweetheart, cows don’t have ribs!”
My response? Cows do indeed have ribs and they’re very delicious!
Back to Reality
Luckily, I don’t have to worry about such barbecue ignorance here at home because the beef ribs are delicious and plentiful. Well, until they sell out that is.
Lockhart
Black’s in Lockhart never seems to sell out of their delicious beef ribs when I visit, though—and I couldn’t be happier about that. As you can plainly see from the photo up above.
Barbecue Capital of Texas
Lockhart, Texas is known for its barbecue. And since it is just an hour or so from my home, it is also known to me as a perfect little drive to get some brisket, sausage and of course, the aforementioned beef rib.
Oh, if Lockhart is the barbecue capital of Texas, doesn’t that mean it’s pretty much barbecue capital of the world?
It is if you’re looking for beef ribs.
